For years I’ve been obsessed with all things Buffalo. In fact, recently I’ve been combing through old posts and I’ve done so many recipes with Buffalo sauce I’ve forgotten all the different iterations.
This Buffalo Chicken Sandwich is a recipe that was first posted in 2013 as a panini. I’ve updated the recipe, made it a little more simple, and switched from a panini to a grilled cheese sandwich, though it is absolutely delicious as both. You will love this simple and delicious recipe!
How to Make a Buffalo Chicken Sandwich

- Prepare the bread. Spread butter on one side of each piece of bread.
- Mix the chicken filling. Stir together the shredded chicken, mozzarella, Buffalo sauce, and blue cheese.
- Put the sandwiches together. Place two pieces of bread, buttered side down, in the hot skillet. Top each piece of bread with half of the cheese and chicken mixture and then the remaining slices of bread, buttered side up.
- Cook the sandwiches. Cover and cook the sandwiches for three minutes. Flip the sandwich and cook for three more minutes.

- Artisan Bread: This is bread that typically has a crusty outer shell with a delicious inside. It is great for grilled cheese.
- Rye Bread: This is another bread that is really hearty and will hold up with the delicious fillings in this grilled cheese.
Having Cooked Chicken on Hand
Having cooked chicken on hand saves so much time in recipes. You have a few options for how to get shredded chicken for this grilled cheese chicken sandwich.
- Buy a rotisserie chicken. Grab one from the store on your way home to conveniently have hot and ready cooked chicken.
- Keep frozen chicken on hand. Freezing cooked chicken to keep on hand is the perfect shortcut for dinners during a busy weeknight!
- Cook chicken breasts quickly using your instant pot or air fryer and shred them with two forks.

Substitutions and Variations
- Skip the blue cheese. Blue cheese and its unique flavor aren’t for everyone. If you can’t stand blue cheese, swap it out for colby jack or cheddar, or add more mozzarella.
- Make it less spicy. If buffalo sauce tends to be too spicy for you (it does contain hot sauce), combine 1/4 cup Buffalo sauce with 1/4 cup ranch dressing.
- Add more blue cheese. If you love blue cheese, you can add more to this sandwich by adding some blue cheese dressing or using it as a dipping sauce.

- 4 slices sourdough bread
- 2 tablespoons butter room temperature
- 1 cup shredded chicken (155 grams)
- 1 cup mozzarella shredded (113 grams)
- 1/2 cup buffalo sauce (118.3 grams)
- 1/4 cup blue cheese crumbles (28 grams)
Instructions
- Spread 1/2 tablespoon of butter on one side of each piece of bread.4 slices sourdough bread, 2 tablespoons butter
- In a small bowl, combine the chicken, mozzarella, buffalo sauce, and blue cheese.1 cup shredded chicken, 1 cup mozzarella, 1/2 cup buffalo sauce, 1/4 cup blue cheese crumbles
- Preheat a large skillet with a cover over medium heat. Place two pieces of bread buttered side down in the hot skillet. Top each piece of bread with half of the cheese and chicken mixture. Top with the remaining bread, buttered side up.
- Cover and cook the sandwiches for three minutes. Flip the sandwich, recover, and cook for three more minutes. Serve and enjoy!

My family and I loved this simple recipe! We aren’t really blue cheese fans so I substituted it for half a packet of ranch seasoning mixed in with the franks and chicken, loved it, thanks for the great post!
