So, I have a super delicious sandwich for you today, but before we get to that, can we talk about Black Box Wine for a minute?

I honestly can’t remember the last time I was so excited to bring a product to my readers! I don’t make any secret of the fact that I love wine. It’s {ahem} part of my blog name . . . a very strange name though it is. I love wine, and I’m not ashamed to admit, I love cheap wine. What do I love more? I had the opportunity to try Black Box’s Cabernet Sauvignon, their Pinot Noir, and their Chardonay. Honestly, I am not a fan of Chardonay’s at all, and I really really liked it. The red’s were incredible too. {I may or may not be sipping some Black Box Wine Pinot Noir as I write this . . . }

I love that the wines are super high quality, but really cost effective. In one big box (that retails for about $25), you are getting the equivalent of 4 bottles. FOUR. So you can break it out for a dinner party, or just pour one single glass at the end of a long long day with three small children . . . you know, just for example.

Let’s put a pin in my love sonnet to this wine for a minute so I can tell you about this amazing turkey and roasted vegetable sandwich. When Black Box asked me where I would take their wine if a bottle wasn’t holding me back, I immediately thought about a picnic in the park. What I wouldn’t give for a quiet picnic in the park with a box of this delicious wine with my sweet husband. And for that picnic, I would bring this delicious sandwich for two.

Loaded with yummy roasted veggies, turkey, havarti cheese, and this amazing aioli made with garlic and fresh basil, it is perfect for a picnic. It feels like a fancy lunch that is perfect for your top notch wine, but it is so easy to make and pack and bring along.

Turkey and Roasted Vegetable Sandwich with Basil Garlic Aioli

Ingredients

  • 4 thin slices of eggplant
  • 6 thin slices of large zucchini
  • 1 tsp garlic salt
  • 2 TBSPs chopped fresh basil
  • 1/2 cup light mayonnaise
  • 1 garlic glove crushed
  • 1 large or two small piece of focaccia bread, sliced in half
  • 2 or 3 large slices of roasted turkey
  • 2 slices of havarti cheese

Instructions

  • Preheat your oven to 350 degrees.
  • Sprinkle the eggplant and zucchini with 1/2 tsp of garlic salt (or thereabouts), let sit five minutes. Flip the eggplant and zucchini and sprinkle with the remaining garlic salt and let stand another five minutes.
  • Roast on a silcon mat or parchment paper lined baking sheet for 10 minutes. Gently flip the vegetables and roast for 10 more minutes.
  • While the veggies are roasting, mix together the garlic, basil, and mayonnaise.
  • When the veggies are finished roasting, spread the bread with the aioli, then layer the turkey, cheese, and roasted veggies.
