Cinnamon Syrup is easy to make and makes a great addition to so many cocktails.
I love creating cocktails from scratch because there are so many fun things you can do with just a few ingredients. One of the great ways to change up cocktails is by making specialty simple syrup.
Simple syrup is so easy to make. It is just the combination of water and sugar together and adds a great sweetness to cocktails and mocktails. By adding other ingredients, you can change the flavor of the syrup and create great specialty drinks at home.
This cinnamon simple syrup is just such a recipe. Made just with some ground cinnamon, you can add a sweet cinnamon twist to any cocktail.
How to Make Cinnamon Syrup
This is a brief overview of how to make this easy recipe. For the full recipe with all of the measurements, see the recipe card at the bottom of the post.
- Combine the water and the sugar in a small saucepan. Cook over medium heat and stir regularly until the sugar dissolves.
- Add the cinnamon. Once the sugar is dissolved, remove the pan from the heat and stir in the cinnamon. Allow to cool before using.
Ground Cinnamon vs. Cinnamon Sticks
I have made this recipe both with cinnamon sticks and with ground cinnamon. I find that you get a stronger cinnamon flavor when you use the ground cinnamon. That being said, you can certainly throw a few cinnamon sticks in the syrup at the end and let them sit in the hot syrup to allow the syrup to infuse.
If you are nervous about the ground cinnamon dissolving, I assure you that it completely incorporates into the syrup leaving you with a really smooth syrup.

Storing
Leftover syrup should be stored in the refrigerator in an airtight container. You can store it for up to one month, but as with all leftovers, use your best discretion. Each time you use it, it should be looked at to ensure that it is still the same consistency and has that same wonderful smell as when it was first made.
If you won’t use your whole batch in a month, this is a great recipe to freeze. Make sure to store it in a container that allows for expansion. Keep it in the freezer for up to three months. Consider freezing it as one ounce cubes (such as in an ice cube tray) so you can pull out just what you need.
Ways to Use Cinnamon Syrup
I have so many cocktails this is amazing in.
- I originally made it for my Eggnog Martini, and it is of course fantastic in that.
- It would be delightful as a replacement for plain simple syrup in my Apple Cider Margaritas.
- I would also love it in my Apple Cider Sangria.
- Of course, you can simply add a splash to your morning coffee or Iced Coffee.
- Outside of drinks, this syrup would be amazing on pancakes, waffles, French toast, or even over some ice cream.

Ingredients
- 1 cup water (234.5 ml)
- 1 cup granulated sugar (198 grams)
- 1 teaspoon ground cinnamon
Instructions
- In a small saucepan over medium heat whisk together the sugar and water. Bring to a light simmer, stirring consistently.1 cup water, 1 cup granulated sugar
- Once the sugar is dissolved, remove from the heat, and stir in the cinnamon.1 teaspoon ground cinnamon
- Let cool completely before using in cocktails.
