If meatloaf is amazing comfort food, then a meatloaf sandwich is your new favorite recipe. This delicious sandwich combines leftover meatloaf, melty cheese, mayonnaise, and my homemade BBQ sauce on hearty sourdough bread. It is a phenomenal and delicious dinner recipe and a great way to use leftovers.
How to Make a Meatloaf Sandwich
Here is a brief overview of how this meatloaf sandwich comes together using meatloaf that is already cooked or leftover. For the full recipe including all measurements, scroll to the recipe card at the bottom of the post.
- Put the sandwiches together. Place the slices of bread down and spread mayonnaise on each slice. Top each with a slice of meatloaf. Then place a slice of cheddar on each one.
- Add the BBQ sauce. Spread BBQ sauce on the other slices and place the bread BBQ side down on top of the cheddar slices to complete the sandwiches. Spread butter on the two outer sides of the bread on each sandwich.
- Cook the sandwiches. Put the sandwiches in the hot skillet and cover. Cook for three minutes, flip the sandwich, and cook for three more minutes. Enjoy!

My homemade BBQ sauce recipe is perfect in so many dishes, including this meatloaf sandwich. It is an ingredient in my meatloaf recipe, and we add a little more to this meatloaf sandwich. With that being said, you can totally grab your favorite store-bought brand if that works better for you.

What Bread to Use
Because this sandwich is so hearty, a thick, sturdy bread like sourdough works well to hold up against all the ingredients. Its flavor perfectly compliments the meatloaf and other ingredients.
I like to cut my bread to fit the meatloaf. As you can see in the photos, we actually only used one slice of sourdough per sandwich because the bread we had was big and each slice cut in half was perfect.

Meatloaf Sandwich Ideas
This sandwich has minimal accouterments, but you could definitely add more here. I would suggest adding these ingredients (except the bacon) after the grilling.
- Cooked bacon would add another great layer of flavor to this. Consider making the bacon in the air fryer to cut down on hands on time.
- Salad greens, such as arugula, would be delicious on this.
- A few thin slices of tomato or some pickles.
- Pickled red onions would pair perfectly with the sweetness of the BBQ sauce.
- Ranch dressing would be a great swap if you don’t like mayonnaise.
Tips and Tricks
- Keep the heat medium-low. With any grilled cheese recipe, you want the outside of the sandwich to be nice and crispy and the cheese inside to be melted. If your pan is too hot, it will burn the outside without fully heating the inside of the sandwich. Give the pan some time to warm up before adding the sandwich to it.
- Use room-temperature butter. This will easily spread on the outside of the sandwich compared to cold butter.
- Switch out the cheese. If you don’t have cheddar cheese slices on hand, provolone or Swiss would also work well.
- Make it in the air fryer. I have a great recipe for making grilled cheese in the air fryer, and I think you could totally cook this meatloaf sandwich recipe the same way!

Meatloaf Sandwich
Ingredients
- 8 slices sourdough bread see note
- 2 tablespoons mayonnaise
- 4 slices meatloaf
- 4 slices cheddar cheese provolone and Swiss work great as well
- 2 tablespoons BBQ sauce
- 1/4 cup butter room temperature
Instructions
- To construct the sandwiches, place 4 slices of bread on a cutting board. Spread 1/2 tablespoon of mayonnaise on each slice. Top each with a piece of meatloaf. Then place a slice of cheddar on each one.8 slices sourdough bread, 2 tablespoons mayonnaise, 4 slices meatloaf, 4 slices cheddar cheese
- Place the remaining four slices of bread on the cutting board. Spread 1/2 tablespoon of BBQ sauce on each one. Place the bread, BBQ side down, on top of the cheddar slices to complete the sandwiches. Spread butter on the 2 outer sides of the bread on each sandwich.2 tablespoons BBQ sauce, 1/4 cup butter
- Heat a skillet over medium-low heat. Place the sandwiches in the pan and cover. Cook the sandwiches for 3 minutes. Flip the sandwich, recover, and cook for 3 more minutes. Serve and enjoy!
