We are just a short week into the thick of summer vacation . . . and I’m ready for my kids to go back to school. I kid. #itotallydoNOTkid I remember vividly the first summer vacation after Gavin had started school and how suddenly he wanted me to have a set schedule for him with planned activities and art projects . . . . and I’m totally not that mom. I want to be that mom! But, I am for sure not her.
And now, here I am with two kids who know the joys of being in school and having a litany of activities they enjoy. The glass has been broken for them both and they now realize that mom is B-O-R-I-N-G. And, honestly? I’m pretty sure that they have let the cat out of the bag to the toddler too.
So I am going to do my best to make a fun summer for them, and in exchange I’m going to reward myself with evenings on the deck drinking fun summer cocktails. Care to join me?
First up on the list of fun summer cocktails, and I know that you know how much I love a good cocktail that can be made by the pitcherful to share with friends, is this Strawberry Daiquiri Sangria. Two drinks as one? Are you crazy lady? Yes, as a matter of fact, I am. And you can blame my kids.
Now that you are ready for this cocktail, let’s talk about it. You start with a bottle of Riesling, but if you don’t like your drinks sweet, you could use a drier white wine like a Pinot Grigio. If you like your drinks really sweet, you could switch the Riesling for a Moscato. Then you make it like you were making a Strawberry Daiquiri! You throw in some rum, some lime juice, and some frozen strawberries. I then added a little bit of triple sec to sweeten it up. Then you blend it up, throw it in a freezer safe container (I used two old tupperware take out containers), freeze overnight and give it another blend before serving. If you can’t wait though, no judgement. Just go for it right from the first blending!
Strawberry Daiquiri Sangria
Ingredients
- 750 ml bottle of riesling
- 3 heaping cups of frozen strawberries
- 1 cup of light rum
- 1/4 cup triple sec
- 2 TBSPs lime juice
Instructions
- Blend all the ingredients. Pour into freezer safe containers. Freeze overnight and reblend before serving.

That’s why summer camp. Seriously. I teach all year and then when summer comes, I want my days. I’m not a fun mom, Mommy Camp quite literally sucks, and I have accepted it. Whenever we do crafts, I just want to knock the table over in frustration.
So long story short, I feel your pain.

I think it is much better when it is served from frozen. If it begins to thaw as the party goes on, I think that will still be delicious.
