Greek Salad with Chicken makes for a delicious light meal that everyone will love! The flavors of this recipe are perfection.
One of my favorite meals to eat in the summer (really all year round), is big salads with sliced chicken on it. It feels very filling while still being really healthy and nutritious.
I love it when we can easily grill up marinated chicken in the summers. It is the perfect addition to a salad. This is true once again with this Greek Salad with Chicken.
There are a few different components to this salad recipe, but they all come together perfectly. This recipe makes for a very great lunch or dinner. It is something your family will come back to again and again.
WHAT MAKES UP A GREEK SALAD WITH CHICKEN
As I mentioned there are a few components to this recipe. We can go over each of them below.
- Marinated Chicken
- The base of the salad (chopped vegetables and cheese)
- The Greek Salad Dressing
MARINATED CHICKEN
The chicken in this recipe is made with a simple marinade. I love an easy marinade that combines oil, an acid, a sweetener, and some easy seasonings.
CHICKEN MARINADE INGREDIENTS
- Olive oil
- Lemon Juice
- Red Wine Vinegar
- Honey
- Kosher Salt
- Garlic
- Oregano
- Thyme
HOW TO MARINATE CHICKEN
It’s really important that we give the marinade a chance to break down the outer layer of the chicken, adding flavor and tenderizing it. But, it is crucial not to marinate chicken too long.
If you marinate chicken too long it will break down the chicken make it chewy in an unappetizing way. In this recipe, I recommend between 1 hour and 24 hours.
COOKING THE CHICKEN
The chicken in this recipe can be baked right in the marinade. I like to marinate in a glass container that is reusable and also works for baking.
Alternatively, you could grill the chicken. That would be quicker and delicious!
SALAD BASE
We are going to load up this salad with lots of fresh vegetables and other ingredients to make it delicious and interesting.
- Chopped Romaine Lettuce Hearts (You can see how I chop them in this post.)
- Chopped Tomatoes
- Diced English Cucumber
- Kalamata Olives
- Feta Cheese (I used a chopped block rather than crumbled)
- Pita Chips (Think of them like croutons)
GREEK SALAD DRESSING
The ingredient that really pulls any salad together is the salad dressing. Salad dressing are easy to make at home, and great because you can control the flavors.

Greek Salad with Chicken
Ingredients
To Marinate Chicken
- 1 pound boneless skinless chicken breasts (see note before you begin preparing this recipe)
- 1/3 cup olive oil
- 1 tablespoon lemon juice
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 2 teaspoon kosher salt
- 2 cloves garlic minced
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
For Salad
- 3 Romaine lettuce hearts chopped
- 2 tomatoes chopped
- 1/2 English cucumber chopped
- 1/4 cup Kalamata olives
- 4 ounces block feta chopped
- 1/2 cup pita chips
Greek Salad Dressing
- 2/3 cup extra virgin olive oil
- 1/2 cup red wine vinegar
- 2 teaspoons lemon juice
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon onion powder
- 1 tablespoon dijon mustard
Instructions
- In a reusable container, whisk together the ingredients for the chicken marinade. Add the chicken, cover, and refrigerate for between 1 hour and 24 hours.
- After marinating, place the chicken in an ove safe container, cover, and bake for 35 to 45 minutes or until an instant read thermometer reads 165 degrees.
- While waiting for your chicken to cook, prepare the ingredients for the salad and the salad dressing. Layer the chopped lettuce, tomatoes, cucumber, olives, and feta cheese, leaving the pita chips on the side for serving.
- Whisk together the ingredients for the Greek Dressing and set aside. (Note that it will need to be mixed again before topping the salad.)
- Add the chicken to the top of the salad and serve with the dressing on the side, allowing guests to dress their own salad.

Hi Lisa
I tried your Greek chicken last night and it was very good -I didn’t have red wine vinegar so used white – still very good. Also there wasn’t an oven temperature or time to cook so I did 350 F for about 45 minutes which seemed to work fine.
I definitely will be doing this again with red wine vinegar as I do love that flavor.
