We are headed into spring and my head is spinning with recipes that will sing spring to you. The first one I thought of was this bright and cheerful sugar cookie Fruit Pizza. It is a delicious recipe that I was tempted to eat for breakfast while prepping it for you.

This amazing giant cookie dessert would be perfect for a baby shower or a backyard bbq. But I think it would be a show stopper as an Easter dessert.

How to Make Fruit Pizza

  1. Start with a Cookie Crust: Prepare the cookie crust as written in the recipe card below. It works best if you make it on a 12 or 14 inch pizza pan. A 12 inch pan will result in a very thick, and absolutely delicious, pizza.
  2. Allow the Crust to Cool: Before you decorate allow the sugar cookie crust to cool completely. It works really well to make the crust the night before, making very quick work of assembling the next day.
  3. Frost: We are using a cream cheese frosting for this recipe. Please see my suggestion below if your family doesn’t love cream cheese.
  4. Decorate: Finally, add some cut fruit in whatever delightful pattern that you would like! See my suggestions below.

Cream Cheese Frosting

This recipe uses a delicious cream cheese frosting that I think is so perfect with the fruit. This fruit pizza frosting, along with the crust, could also be made the night before and stored in the refrigerator until you are ready to frost.

If your family isn’t in love with cream cheese, my vanilla frosting would be amazing with this too. Just make sure to have your fruit all prepped so you can decorate as soon as it is frosted. That frosting hardens quickly.

What Fruit to Use on a Fruit Pizza

The most important things to consider when picking fruit is to use fruit that is colorful and sturdy. Skip yellow fruits, like pineapple, because it won’t stand out against the frosting. Choose very ripe fruit that will hold it’s juice and not bleed into the frosting.

We chose to go with:

  • Blueberries
  • Strawberries
  • Kiwi
  • Grapes
  • Blackberries

Making a Pattern

You can follow my pattern exactly, or you can go with something else. There is no right or wrong answer here. A few tips:

  • Find the center and put one piece of fruit there.
  • Alternate colors. For example, I wouldn’t do a ring of strawberries and then a ring of raspberries.
  • Slice fruit thin. It makes it easier to decorate and easier to eat.
  • Alternate how you lay fruit. You’ll notice that the kiwi is just placed, but the strawberries are layered. It gives it a nice look.

No matter how you add the fruit, it will be delicious, I promise.

Ingredients

Sugar Cookie Crust

  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 14 tablespoons unsalted butter room temperature
  • 1 1/2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs

Cream Cheese Frosting

  • 8 ounces cream cheese room temperature
  • 4 tablespoons unsalted butter room temperature
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Fruit to Decorate

  • 1 blackberry
  • 12 strawberries sliced thin
  • 1/2 cup blueberries
  • 4 kiwi peeled and cut into half moons
  • 1/2 cup red grapes cut in half

Instructions

Cookie Crust

  • Preheat your oven to 350 degrees. Spray a 12 or 14 inch pizza pan with cooking spray and set aside.
  • In a large bowl mix the flour, baking powder, and salt together. Set aside.
  • In a large bowl using a handheld mixer or in the bowl of a stand mixer, cream the butter and sugar together until it is light and fluffy, about 3 to 6 minutes. Add in the eggs one at a time, then add in the vanilla extract.
  • Add the flour mixture. Turn the mixer on low and as soon as you are able to turn the mixer up without the flour flying out of the bowl, turn the mixer on high. Mix just long enough for the flour to be fully incorporated. Be careful not to over mix.
  • Spread the dough out onto the prepared pan. Bake for 20 to 25 minutes or until the edges begin to turn golden brown. Allow to cool 1 to 2 hours before decorating.

Cream Cheese Frosting

  • Cream together the cream cheese and the butter in the bowl of a stand mixer (or in a large bowl using a handheld mixer.)
  • Add the powdered sugar one cup at a time. Then add in the vanilla extract.
  • Spread evenly over the top of the cooled sugar cookie crust.

Decorating

  • Place the blackberry in the middle of the fruit pizza. Then use five strawberrry slices to make a star pattern around it.
  • Add blueberries around the strawberry star. Add a row of kiwi slices. Around the kiwi layer the strawberry slices to make a ring.
  • Next, alternate grape halves and blueberries. Add another row of kiwi slices. Finally add more blueberries.

I was referring to my Vanilla Buttercream Frosting. You can find it here: Vanilla Frosting.

  4. KathleenDC says

I’ve made this with the ready made sugar cookie dough in my 7th grade cooking class. Just slice it and place the cookies on the pizza pan with the sides just touching. When it bakes the cookies will spread out and become one large pizza sized cookie.
