This Bailey’s Fudge is easy to make, tastes absolutely delicious, and is the perfect amount of rich amazingness!
You guys.
The most embarrassing thing happened to me the other day.
So I was at Target looking for cookie cutters shaped like ninjas because, I mean, why wouldn’t I be doing that on a random Tuesday night?
Side note, they are for a Christmas post that is coming your way soon ;)
I was walking around listening to my podcast and shopping, which has become my newest and very favorite pastime #nerdpastimes, and I guess going there I just assumed that ALL the Christmas stuff would be out. I mean, I’m working on all my Christmas posts, so it stands to reason that Target would have all their partridges in pear trees in a row . . . . that was supposed to be like ducks in a row . . . I sense it fell flat . . .
Anyway!
So, their Christmas stuff is not in fact all out as I thought it would be, but there were a bunch of guys opening boxes and putting it out. Given that shopping trips alone to Target are more rare than my house being clean and going with the kids makes me want to stab myself in the eye with all the plastic spoons Target has to offer . . . I thought I should just go and ask them about it. I mean. There had to be some ninja cookie cutters in those unpacked boxes. #firstworldproblems
So I ask one of the guys about it and made a joke about something because obviously I’m hilarious and need to show that to everyone all the time . . . . and you guys. I think he thought I was flirting with him! All of the sudden he worked into the conversation that he is married. You guys. It wasn’t a conversation. I was asking about cookie cutters!
All of the sudden it occurred to me “OMG. He thinks I’m flirting with him!!!” And as the thought occurred to me, approxiatmely 0.2 seconds after he mentioned his wife, my face went BEET red. Which I’m sure was really further evidence that for him that I was the most desperate of housewives. I was dying. I am not even kidding when I tell you that I seriously considered explaining to him, much in the same way that I have done here with you, dear wonderful strangers of the whole inter webs.
But then he quickly told me he didn’t have the cookie cutters and I swallowed what was left of my pride, hung my head, and high tailed it to the baking section where I promptly bought them out of chocolate chips, Ande’s pieces, and all the sweetened condensed milk I could get my hands on.
I already had Baileys.
#duh
And here, you have the Bailey’s Fudge bought from that fateful night, lol.
It is phenomenal, delicious, and so ridiculously easy. This fudge is perfect for gift giving because it is so insanely easy to make. And it is totally addictive. I made a video for this post (YAY!! . . . Other side note . . . did you know that you really get shown only like 1% of what I post on FB if you don’t interact with the posts . . Facebook loves showing you videos though, that’s why so many food bloggers you love have been doing them.) and because of that and the needs for a pan to make, a pan that was done . . . and a video retake that required ANOTHER pan, I literally have so much of this fudge.
And I’m okay with that :)
This fudge is fine out of the fridge, but if you want it to be very firm I would keep it in there. Enjoy peeps!
EDITED TO ADD: I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.

This fudge is Amazing! I only used 1/4 cup of Bailey’s I could have went ahead and used the half cup, had no problems with it setting. Again like I said, this fudge is amazing!

Very easy to make. Delicious fudge!

Can i use chocolate bars instead og chocolate chips? And if i want to increase the baileys to 1/2 cup .
Lisa Longley says
I haven’t tried chocolate bars. You can try increasing to 1/2 a cup, but you might have trouble with it setting. If that happens, you could always spoon it into truffles and dip them in chocolate.
Lora says
Is the Baileys cold from the fridge or room temperature?
I think the not setting might be using the whole can of the milk…I only find that in 14 oz and most recipes call for a whole can. Looking forward to making this soon
Lisa Longley says
Yes, most cans come in 14 ounces. You need to pour it into a liquid measuring cup and measure out 8 ounces (not weight, liquid ounces).
Shirley says
can you put pecans in the fudge
Lisa Longley says
Yes, sounds delicious!

Made this before Christmas using 1/2 cup Bailey’s -Everyone loved it !
Today I made it again but I substituted Chocolate Cherry Bailey’s (1/2 c) and topped it with chopped dried cherries!

I just made this last night & it turned out great. So far my favorite fudge recipes include that creamy sweetened condensed milk. I have a picture but don’t see how to add it but believe me, easy & delicious

I don’t drink much but on occasion I like a white russian. Since I don’t drink very often, I had a lot of Bailey’s left over. Perfect way to use some of it and the recipe is so easy to make! I had to share because I don’t need this kind of goodness in my house too long. They enjoyed it too! I didn’t catch the part where you said, use 1/4 cup of Baileys to be sure it sets, but I think the key is the amount of sweetened condensed milk. Next time I’ll use the full 1/2 cup of Bailey’s, I really like your recipes, thanks so much for the efforts you put forth.

My Cowboy loves his Southern Comfort and I use it generously in his favorite cake. Can I use it in place of the Jack Daniels in this fudge?
Lisa Longley says
You sure can, I hope he loves it!
Donna Miles says
Can semi sweet chips be used instead? We do not care for milk chocolate.
Lisa Longley says
Absolutely!
