This Bailey’s Fudge is easy to make, tastes absolutely delicious, and is the perfect amount of rich amazingness!
You guys.
The most embarrassing thing happened to me the other day.
So I was at Target looking for cookie cutters shaped like ninjas because, I mean, why wouldn’t I be doing that on a random Tuesday night?
Side note, they are for a Christmas post that is coming your way soon ;)
I was walking around listening to my podcast and shopping, which has become my newest and very favorite pastime #nerdpastimes, and I guess going there I just assumed that ALL the Christmas stuff would be out. I mean, I’m working on all my Christmas posts, so it stands to reason that Target would have all their partridges in pear trees in a row . . . . that was supposed to be like ducks in a row . . . I sense it fell flat . . .
Anyway!
So, their Christmas stuff is not in fact all out as I thought it would be, but there were a bunch of guys opening boxes and putting it out. Given that shopping trips alone to Target are more rare than my house being clean and going with the kids makes me want to stab myself in the eye with all the plastic spoons Target has to offer . . . I thought I should just go and ask them about it. I mean. There had to be some ninja cookie cutters in those unpacked boxes. #firstworldproblems
So I ask one of the guys about it and made a joke about something because obviously I’m hilarious and need to show that to everyone all the time . . . . and you guys. I think he thought I was flirting with him! All of the sudden he worked into the conversation that he is married. You guys. It wasn’t a conversation. I was asking about cookie cutters!
All of the sudden it occurred to me “OMG. He thinks I’m flirting with him!!!” And as the thought occurred to me, approxiatmely 0.2 seconds after he mentioned his wife, my face went BEET red. Which I’m sure was really further evidence that for him that I was the most desperate of housewives. I was dying. I am not even kidding when I tell you that I seriously considered explaining to him, much in the same way that I have done here with you, dear wonderful strangers of the whole inter webs.
But then he quickly told me he didn’t have the cookie cutters and I swallowed what was left of my pride, hung my head, and high tailed it to the baking section where I promptly bought them out of chocolate chips, Ande’s pieces, and all the sweetened condensed milk I could get my hands on.
I already had Baileys.
#duh
And here, you have the Bailey’s Fudge bought from that fateful night, lol.
It is phenomenal, delicious, and so ridiculously easy. This fudge is perfect for gift giving because it is so insanely easy to make. And it is totally addictive. I made a video for this post (YAY!! . . . Other side note . . . did you know that you really get shown only like 1% of what I post on FB if you don’t interact with the posts . . Facebook loves showing you videos though, that’s why so many food bloggers you love have been doing them.) and because of that and the needs for a pan to make, a pan that was done . . . and a video retake that required ANOTHER pan, I literally have so much of this fudge.
And I’m okay with that :)
This fudge is fine out of the fridge, but if you want it to be very firm I would keep it in there. Enjoy peeps!
EDITED TO ADD: I have had a lot of complaints from people of this fudge not setting. The recipe calls for 1/2 cup of Baileys, and when I originally made it I only used 1/4 cup. I’ve made it both ways and had it set, but I’m editing the recipe just to be on the safe side.
Bailey’s Fudge
Ingredients
- 3 1/2 cups milk chocolate chips about 21 ounces
- 1 cup sweetened condensed milk (see note)
- 1/4 cup Baileys see note
- 1 tsp vanilla extract
- 1/2 cup Andes baking chips
Instructions
- Line an 8 by 8 inch pan with aluminum foil.
- In a large bowl combine the chocolate chips and sweetened condensed milk. Microwave for one minute, stir, and microwave for 30 seconds.
- Stir in the Baileys and the vanilla extract until smooth. Pour into the prepared pan and top with the baking chips. Press in slightly.
- Cover and refrigerate for four hours until firm. For firmer fudge store in the refrigerator.

So glad you liked it!

Have you tried using 2 tablespoons less sweetened milk. That might set up firmer.
Dona says
Mine has set since afternoon, just checked to cut and it is still very soft and gooey . not firm like it should be. Disappointed
Lisa Longley says
Hi Donna, I’m sorry that this didn’t work out for you! Is it possible that you used evaporated milk instead of sweetened condensed milk? It would be such an easy mistake and it would make a world of difference.

I havent made this recipe yet but from what i know about cooking maybe just
microwaving it a little longer to “cook” might help with it setting up.
Lisa Longley says
Hi Laurie! Thanks so much for your comment! That would melt the chocolate more and I don’t think it would help with those who are having trouble with it setting. :)
Cindy Baker says
In my past experiences with making Christmas candy, I have discovered that your extract (vanilla) in this case has to be real vanilla, not the cheap extract. When using the extract it curses the melted chocolate and must be thrown out. I make amazing turtles. If you want my recipe, write me. [email protected]
Happy Christmas baking,
Cindy

Do you have the original recipe? I made it several times last year and it always set perfectly. I prefer more booze! LOL
Lisa Longley says
The original recipe is totally the same but has 1/2 cup Baileys instead of 1/4 cup. I’ve had lots of people try it that way with success.
Karen says
This is a good fudge but the problem is when it sits out is gets very soft. So what I’m doing is making the fudge and then making truffles out of is by dipping it in milk chocolate and sprinkling ande mint chips on it.
Lisa Longley says
Hi Karen! I didn’t actually have that problem with the fudge getting soft.
Tara says
I made the fudge using this recipe and it came out perfect…I will try using 1/2 cup of baileys next time…can you use this same recipe and substitute Baileys with kahluah?
Lisa Longley says
You for sure could! I hope you try it and come back and tell me about it!

I just made this fudge this morning and thought some comments on my experience might be helpful. I was eyeing the whole 14 oz can of sweetened condensed milk, thinking to myself wow, that looks like a cup to me. But I did a little research and found that a cup of condensed milk is actually 11 ounces, not the whole 14 oz can. I used a whole single serving little bottle of Bailey’s, which was a hair shy of 1/2 cup. My kitchen is on the cool side, but my fudge has been sitting on my counter now for about 3 hours or so, and I just cut it and it set up just fine. So for those who had trouble with the fudge setting, perhaps you added too much milk? The half cup of Bailey’s really sets this fudge apart. I’ve no doubt you could use any liqueur to get a fabulous tasting fudge! Thank you for this delightful recipe, I will definately make this again!
Lisa Longley says
It never occurred to me that people might just be adding the whole can even though it says 1 cup in the recipe.

Has anyone made this with White Chocolate Chips?
