What is Cajun Seasoning?
Cajun seasoning is a spice mix that you can buy in the spice aisle at your local grocery store and is typically a mixture of a few easy to find spices . . . which is why we are making our own, baby. It starts with paprika and is a little spicy, a little smoky, and a lot delicious.

How to Make Cajun Seasoning
Here’s all you need to create the perfect Cajun spices:
- Paprika
- Kosher Salt
- Onion Powder
- Garlic Powder
- Black Pepper
- Thyme
- Oregano
- Cayenne Pepper
- Red Pepper Flakes
How Long Will My Cajun Seasoning Last?
That depends on how fresh your spices are that you are starting with. Since dried herbs go bad first, it is most important that your thyme and oregano are the youngest. Assuming that your herbs are recently dried, your Cajun Seasoning will last for a year in an air tight container kept in a dry cool place, like a mason jar in your cupboard.
Is Cajun Seasoning Spicy?
This seasoning does have a little bit of a kick to it. I like this recipe just as it is, and my family does as well. If you are very sensitive to spice you can cut the cayenne pepper in half and leave out the red pepper flakes.
If you love your dishes spicy, you can add more cayenne pepper. One of the things I love most about homemade seasoning mixes is that they can be adjusted.
Cajun Seasoning Recipe
Ingredients
Large Batch
- 1/3 cup paprika
- 3 tablespoons kosher salt
- 3 tablespoons onion powder
- 3 tablespoons garlic powder
- 1 1/2 tablespoons black pepper
- 1 tablespoon thyme
- 1 tablespoon oregano
- 1 teaspoon cayenne pepper (more or less to taste)
- 1/2 teaspoon red pepper flakes
Small Batch
- 1 tablespoon paprika
- 1/2 tablespoon kosher salt
- 1/2 tablespoon onion powder
- 1/2 tablespoon garlic powder
- 3/4 teaspoon black pepper
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- dash of cayenne pepper (more or less to taste)
- pinch of red pepper flakes
Instructions
- Combine all the ingredients, whisking well.
- Store in an airtight container.
Notes
- If this seasoning mix is made with fresh spices, it can be stored in an airtight container in a cool place for up to 1 year.

Hi, Joanne, I made your cheeseburger casserole tonight. It was delicious, it went over very well with the guys. I even changed it up a bit by using Whole Grain Pasta. My question to you is, when I make the homemade spices like Cajun and Taco Spice, how much do I use for cooking?

Usually, the recipe will indicate. If it is a recipe that says a 1 ounce packet of Taco Seasoning, you will want 3 tablespoons of mine. If it doesn’t say either way, I would start with 1 tablespoons and work up from there.

This is a great recipe. My husband loves smoked everything, so I substituted smoked paprika for the paprika and chipotle for the cayenne. I also omitted the salt as a personal choice. It was a big hit!

Way too salty for me, to the point of tasting unhealthy and inedible. Then I looked at the recipe nutrition and it appears even a small serving would have several times the adult daily limit of sodium.

I’m so sorry to hear that you didn’t enjoy it. Is there any chance that you used table salt? It is significantly more salty than kosher salt. We used this again just the other day, it’s a family favorite. But absolutely, tastes vary.

I am thinking of trying foil packet meals. I have never been much on cooking. Usually breakfast is all that I have done except many years ago I cooked one or two meals for my son and daughter and then I took care of my two grandsons and had to fix their breakfast before taking them to school. There has to be many men that have lost their wives or their wife has just quit cooking. I am almost 89 and I am looking for something easy and fast for my meals. I am thinking that we men could just fix the packets, maybe a dozen and put them in the freezer and take out a couple each day for lunch and dinner. I love Chinese, Mexican, Italian, Cajun and just plain country boy foods such as steak, potatoes, peppers, plenty of onions, tomato, etc. I love spicy foods. Is there a book with recipes for me?
