This delicious Egg Roll in a Bowl is the perfect low calorie dinner. You will love this filling recipe!
I love egg rolls so much! Their flavor is just perfection, and I am never able to resist them. But I don’t love the fried wonton wrapper. It’s not super nutritious and keeps egg rolls from being a go-to dinner.
This delicious egg roll in a bowl recipe is the perfect solution to that. It takes everything you love about egg rolls, but without the frying and without the wonton wrapper. I just know that you are going to love these as much as I do.
Egg Roll Bowl Ingredients
Just a few simple ingredients are needed to make a delicious egg roll in a bowl. For the full recipe including all ingredients and their measurements, scroll to the recipe card at the bottom of the post.
- Ground turkey or ground chicken: Provides a light protein base. You could also use ground beef or ground pork.
- Coleslaw mix: Adds the essential crunch and fresh flavor known and loved in traditional egg rolls. This is a bag of shredded cabbage and carrots found near the bagged lettuce at your grocery store.
- Low sodium soy sauce: Adds a savory, umami-rich depth to the dish without too much salt. If you need the recipe to be gluten-free, use a gluten-free soy sauce or coconut aminos.
- Rice wine vinegar: This rice vinegar offers a mild, slightly sweet acidity that brightens the overall flavor of the dish.
- Ginger: Brings a subtle spicy zing that elevates the overall flavor. I share two options for cooking with ginger below.
- Garlic: Infuses the dish with a rich, savory flavor.
- Green onions: Add a mild, slightly sweet onion flavor along with a pop of color.
How to Make Egg Roll in a Bowl
Here is a brief overview of how this easy egg roll in a bowl recipe comes together. For the full recipe including all measurements, scroll to the recipe card at the bottom of the post.
- Cook the ground turkey. Heat the sesame oil in a large skillet and add the ground meat, breaking it up as it cooks.
- Add the coleslaw. Once it has begun to brown, add in the slaw mix, soy sauce, vinegar, garlic, and ginger.
- Add the onions and enjoy! Stir in the green onions. I love to top my egg roll bowl with some Sriracha, and more green onions and sesame seeds are fantastic garnishes. Enjoy!
Cooking With Ginger
When a recipe calls for fresh ginger, you have two options. You can get a piece of ginger root, peel it, and grate it. This option tends to be cheaper, but more time-consuming. Your other option is to buy a tube of pre-grated ginger to keep in your refrigerator and measure out the exact amount you need. This is the route I usually go for the convenience. It adds such great flavor to this egg roll in a bowl with coleslaw mix!
Storing and Reheating Leftovers
Store any leftovers in an airtight container in the refrigerator for up to four days. Reheat only the portion you plan to eat in the microwave or on the stovetop over low heat until heated through. Always use your best discretion when storing and reheating leftovers.
If you like to meal prep, this is a great dish to meal prep. With it lasting up to four days in your fridge, you can make a batch of this on Sunday evening and take it for lunch Monday through Friday. This is such a win for me.
