This Watermelon Coconut Agua Fresca is so easy and tastes like summer! Perfect for a hot day!

Then you know that the past few days I was off in California with a bunch of blogging friends on a blogging retreat at the amazing and gorgeous Holman Ranch. It was amazing and wonderful and all sorts of awesome (and don’t worry there will be a whole blog post about it in the next few weeks).
But holy crap am I tired!
Mainly just from the travel. I had the absolute weirdest trip home in which I was almost late to the airport, had my flight rerouted, found myself almost getting into a screaming match with a TSA agent, running through the airport barefoot, sitting next to two guys on their way to Vegas who were already having a really good time {cough}, sitting between two guys who already had a really good time in Vegas, and finally walking the aisles with a baby who was not my own partially to be a good samaritan and partially because I really missed my baby and needed a fix like the baby addict that I am.
So, forgive me when I say I’m going to just tell you about this amazing drink and then call it a day.
This drink is crazy easy to make, my kids love it, and it is so insanely perfect for summer. It has no processed sugar, and very little added agave nectar, so I actually feel kind of decent about my kids drinking it in the summer when they are insanely hot and in need of hydration. It might be our go to summer drink.
Good enough? Okay, you go ahead and leave me a comment if I didn’t write enough and I will happily share more details.
Probably just about the drink and not about my fellow passengers as this blog is a solid PG and they are sketchier than NC-17.
Watermelon Coconut Agua Fresca
Ingredients
- 3 cups of cold cubed watermelon
- 1 cup of cold coconut water found near the flavored waters at lots of different stores
- 1 1/2 to 3 tsps agave nectar
Instructions
- Blend together the watermelon cubes and the coconut water.
- Add a little bit of the agave nectar, blend, and then add more as needed.
- Strain and serve.

We love making agua fresca during the summer and watermelon is one of our very favorites! Love the idea of using coconut water!! And girl, your trip home sounds completely EXHAUSTING! Your pics had me laughing for hours though..those guys looked HILARIOUS :) I hope you’re getting some rest and enjoying your babies.
