Broccoli Salad

Broccoli Salad is the perfect summer side dish. It is made with simple ingredients, comes together in a snap, and is absolutely delicious!

Ingredients

  • 8 cups broccoli florets about 2 medium heads (486 grams)
  • 1 cup red grapes cut in half (163 grams)
  • 1/4 cup finely chopped walnuts (27 grams)
  • 1/2 small red onion diced

Dressing

  • 1 cup light mayonnaise full fat mayo will also work (243 grams)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon kosher salt

Instructions

  • Please note that the broccoli is eaten raw in this recipe. The dressing softens it just a little and the result is delicious.
  • Combine the broccoli, grapes, walnuts, and red onion in a large bowl.
  • In a small bowl, whisk together the mayonnaise, red wine vinegar, sugar, and salt until fully combined.
  • Pour the dressing over the other ingredients and toss to combine. (See instructions in the post for making ahead and storing leftovers.)
