Instant Pot Garlic Potatoes

Instant Pot Potatoes are so easy to make, and are the perfect fast side dish for so many dinners. My family is obsessed with this easy garlic potato recipe.

Ingredients

  • 1.5 pounds boomer gold creamer potatoes washed and cut in half, see notes 1 & 2 (680.4 grams)
  • 3 cups water see note 3
  • 3 tablespoons unsalted butter
  • 2 cloves garlic minced, see note 4
  • 1 teaspoons kosher salt if using table salt, start with only 1/2 teaspoon
  • 1/4 teaspoon black pepper

Instructions

  • Place your prepared potatoes in the bottom of the Instant Pot.

  • Cover with water. Put on the instant pot lid and set it to the sealing position.
    3 cups water
  • Set the Instant Pot to manual and high. Set the time for 5 minutes.
  • At the end of the time, do a quick pressure release to release the pressure. This is important. If you do a natural release (don't unseal the pot at the top), the potatoes will over cook. Once the float valve drops, open the Instant Pot carefully.
  • Drain the water. Make sure to completely drain them. Toss them with the melted butter, garlic salt, and pepper. Serve and enjoy.

Notes

  1. Alternatively, you can make this recipe with any type of potato. Simply wash and cut the potatoes into 2 inch cubes. Set your Instant Pot for 8 minutes instead of five.
  2. If your creamer potatoes are very small, cook for 3 minutes or skip cutting them in half.
  3. The amount of water you use is less important than making sure the potatoes are completely covered.
  4. Because the garlic isn't cooked in this recipe, there is a very strong garlic flavor. If that isn't appealing to you, you can cook the garlic in the water with the potatoes and drain it all in a mesh sieve. Alternatively, you can cook the garlic in the 3 tablespoons of butter while the potatoes cook and toss them with that butter when they are done cooking.
