Roasted Green Beans
Simple Roasted Green Beans are the perfect side dish for a weeknight dinner or a holiday meal. This green bean recipe is a keeper!

- 1 pound fresh green beans rinsed and hard stems removed (453.6 grams)
- 2 tablespoons olive oil
- 2 teaspoons kosher salt if using table salt, start with half
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons Parmesan cheese optional
- fresh parsley optional
Preheat your oven to 425 degrees Fahrenheit.
Toss the 1 pound of green beans with the 2 tablespoons olive oil on a rimmed baking sheet.
Season with half the kosher salt (1 teaspoon) and pepper (1/8 teaspoon) listed.
Roast for 20 to 25 minutes in a single layer or until the beans are tender. Half way through roasting toss the green beans and and rotating your pan to account for any hot spots in your oven.
Toss the beans with 1 tablespoon lemon juice and add some 2 tablespoons Parmesan cheese and freshly minced parsley if you want. (Please note this adds just a subtle lemon flavor. If you want a stronger lemon flavor add 1 teaspoon of lemon zest as well.)
Taste the beans and add more salt and pepper as desired (1 teaspoon and 1/8 teaspoon respectively).
