Roasted Green Beans

Simple Roasted Green Beans are the perfect side dish for a weeknight dinner or a holiday meal. This green bean recipe is a keeper!

Ingredients

  • 1 pound fresh green beans rinsed and hard stems removed (453.6 grams)
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt if using table salt, start with half
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons Parmesan cheese optional
  • fresh parsley optional

Instructions

  • Preheat your oven to 425 degrees Fahrenheit.
  • Toss the 1 pound of green beans with the 2 tablespoons olive oil on a rimmed baking sheet.
  • Season with half the kosher salt (1 teaspoon) and pepper (1/8 teaspoon) listed.
  • Roast for 20 to 25 minutes in a single layer or until the beans are tender. Half way through roasting toss the green beans and and rotating your pan to account for any hot spots in your oven.
  • Toss the beans with 1 tablespoon lemon juice and add some 2 tablespoons Parmesan cheese and freshly minced parsley if you want. (Please note this adds just a subtle lemon flavor. If you want a stronger lemon flavor add 1 teaspoon of lemon zest as well.)
  • Taste the beans and add more salt and pepper as desired (1 teaspoon and 1/8 teaspoon respectively).
