Brown Sugar Roasted Sweet Potatoes
Ingredients
- 4 TBSP unsalted butter melted
- 2 TBSP light brown sugar packed
- 1/2 tsp cinnamon
- 1/2 tsp kosher salt
- 1/4 tsp cayenne pepper
- 2 large sweet potatoes peeled and cut into 1/2 inch cubes
Instructions
- Preheat your oven to 450 degrees. Line a baking sheet with aluminum foil.
- Melt the butter in a microwave safe bowl. Mix the brown sugar, cinnamon, salt, and cayenne pepper into the butter.
- Spread the potatoes on the lined baking sheet. Toss with the butter mixture until the potatoes are completely coated. Bake 20 to 25 minutes, stirring once halfway through.

I made these last night along with a lemon-pepper chicken and steamed broccoli. My husband and I loved them! I don’t like really hot food, but that little bit of cayenne pepper really was good – I never would have thought it. It’s our new favorite way to make sweet potatoes!

Can this be cooked at a lower temp for a longer time? I am making meatloaf as well and that cooks at 350 for an hour, would that me ok instead of cooking at 450? I only have one oven lol!!

Hi Sara! I’m so sorry, I haven’t tried that. My guess is yes. You will just get potatoes that are less crisp.

Hi, I’ve made these and they are great! I’m wondering, if I make them with oil instead of butter will they still turn out good? I want to make them for an event but some people have dietary restrictions.

Hi Britt! The only thing about the oil is that it is going to change the flavor. Olive oil would be your best choice here.
